The feast is associated with the flight into Egypt, honoring the donkey used by the Holy Family. Actually, St. Matthew doesn't say that they even had a donkey.
Perhaps the donkey is deduced from the angel's words to Joseph: "Take the young child and his mother and flea into Egypt..."
