Some say they are christians.. and wear crosses around their necks..
They have pretty much as much proof as any other christian..
I know some methodists, presbyters, and baptists that live like hell but say they are christians too..
I won't start with some of the roman catholics I know.. and other orthodox types..
We could be here all day and nite..

I guess using the actual words of lds leaders doesn’t count for complete accuracy.
All I have is my opinion.. I know christians that say that Christ was a myth.. and others that say that he wasn't God at all but a visionary.. Many opinions and versions of Jesus ministry.. told by accepted Christologists.. and unaccepted ones..
The Mormon religions views are really no stranger than some of those held in the Roman Catholic church.. or in other versions of Gnostic-like belief systems.. or in many Pentecostal based teachings in a Kabuki Theater of masks, makeup, uniforms/costumes and strange sounds.... sometimes set to music.. with classic themes and folk dancing..

Well, you know the old saying donkey see donkey do.
Our preacher said almost the same thing - this morning. That Jesus hated religion. And Jesus doesn't want people to be in a Religion - but to be in a personal relationship with Him. A relationship that can be personal because Jesus - being a person, knows what it is like to be like us. The ups and downs of living, the pain of suffering and death.
But a relationship that can be full because he paid the price for our sins on the cross. And a relationship that continues because of His resurrection. And a relationship that has power because of the Holy Spirit. This is the resurrection that I celebrate on Easter. Regardless of the debate on the source of the name “Easter” and the influence of other pagan rituals. And my hope and prayer is that God's grace will prevail when I am shown what REALLY matters, and where I fell short.

Sort of like you saying how we try to “bag” God. Not so much bag him, but trying to understand God fully. Which at least for me, I know He is so far removed from what my feeble mind and spirit can comprehend! But I try to be open to what I read and learn.
Perhaps that is why these old pagan symbols were used to begin with. To help the pagan understand God in terms that they were familiar with and could understand. And while perhaps not pagan - little kids and young in faith can understand the resurrection in comparison of the “rebirth” of the world in springtime and the idea of hatching eggs and newborn bunnies. (Although the bunny delivery eggs idea is a bit confusing to those understanding the reproductive systems of rabbits and chickens!)
