I particularly like to make Spanish omlettes -- myam, myam! Or, the options here are pierogi (dumplings stuffed with cottage cheese (Ruskie) or meat (mięso) or sauerkraut (kapusta kiszone) or spinach (szpinaczki)) or the ever favorite kotlet schabowy (pork chops -- they taste best in E. Europe!).

I've been dabbling in salads as well and the pickled gherkin juice (ogorki kiszone) makes for a great base. You can also add in sour cream, dill and then put in cucumbers, some papyrka and some slices of sausage or other cold meat along with buckwheat (kasza grzyczyna) or pasta and it's a good meal.

My Mom who's got the Irani heritage is appalled at what we eat though -- she's a great cook and I never learned (strangely enough my wife's mum was and her aunts are great cooks and SHE never learned either!).

I'm Lithuanian on my father's side -- we have pierogi, too! Only in Lithuanian -- the word is something like vittini (no one's quite sure how to spell it). I'll be making them for Christmas: most with my family's traditional filling of bacon, mushroom and onion; and some with my niece's favorite filling of mashed potato mixed with sour cream and cheese. The whole family (and friends) love them -- me, too, but they're lot of backbreaking work!

I like to make grain salads (barley, bulgur, buckwheat, quinoa, and so on) with vegetables and cheese. High fiber meals are very good for the innards! My family gets cranky, though. They want meat!
