I think they forgot Texas. The best BBQ I've ever eaten was in Texas. It was beef brisket, Mesquite cooked with a mustard based sauce. Hmmmmm

While I enjoy brisket, I cannot consider it BBQ. I think it is written in Leviticus that only pork can be called BBQ....

I am not normally one to praise anything Texan but they do an excellent brisket down there. Yes its beef, yes its brisket, yes its BBQ.

I never ate BBQ in Texas, but I do like the mustard based sauce better. But to me the best BBQ is pork, smoked for hours and hours, with nothing but a dry rub. BBQ sauce on the side. Smoked ribs take about 5 hours, and are my eldest daughter's favorite food.
