We're having late harvest chili tonight. It's a challenge to use all this stuff - waste not, want not keeps running through my head...one of the neighbors brought over a five pound zucchini! She's sick of them, so Grandpashy said we'd take a few off her hands.

Great cartoons tonight. All of them are so appropriate today too. My favorite was the oil derrick one, hits a bit close to home out here in the West. We have so much open space where one could hide oil derricks, but the environmentalists insist the areas must be kept pristine...

I think peaches are my favorite fruit. I love keeping frozen peaches on hand all during the year, and I make those fruit smoothies with peaches, yogurt, and a bit of milk. Yum.

UG...When I was a young girl, I used to eat peaches with evaporated milk poured on top. I haven't done that in years.

SO how do i make lemon curd?? Lemon curd. Yield: 24 ounces.
Sugar 10 oz.
Aigs 7 ounces (6 1/2 aigs probably)
FRESH lemon juice 2 oz.
Butter, diced 5 oz.
Peel a lemon and grate it 1/2 each.
Whisk together the sucre, eggs, and lemon juice and peel in a double boiler until the mixture is thick and reaches (exactly) 165 degrees F.
Add the butter, a bit at a time.
Don't scramble the aigs.

I'm just shaking my head over that article you posted about water in California. Did you know that the environmentalists, specifically the Sierra Club, is working to drain Lake Powell, which is the Glen Canyon dam. They want to return the area to its pristine past origins. What they don't say is most of the water generated goes to...California!!! I live in Utah where water is a precious resource. I'm so glad we don't have that stupid head Davis as governor. I swear most Democrats couldn't govern their way out of a wet paper bag...

Could I use lime juice for lime curd too?Nope, the footnotes say that lime would react with the eggs to cause a fatal explosion. Don't hack up the lime and use it, use lime zest instead. That's the difference. When I finally figure out all the differences in all recipes, I will deserve the title of chef. Sheesh!
