Alvin Bragg would call the act of running over the man, an accident. Bragg would call the stabbing death an act of mercy. Bragg would let the 'man' go with just a warning to not do it again.

I’m glad this is in Texas. Running over him and then returning with a knife to stab him multiple times is premeditation in a logical world. Sounds like a capital offense with appropriate capital punishment to be meted out.
