My son considered a PHD program in Biotechnology/Engineering.
He has a BS in that field.
He applied to about 8 different programs and was accepted by two. The two that had by far the most Chinese lab students were Harvard & MIT. These are the high end biomedical research
institutions in the world.
Some of the labs were 100% Chinese nationals. The professors were also Chinese.
My son ended up getting a job instead at a major Pharma company. He paid off his student loans a couple months ago after less than two years out of college.

My college calculus teacher was Chinese, and that was 40+ years ago. The Chinese are part of the fabric of America and any who break laws should be prosecuted just like anyone else. The problem today is we have a weak FBI that is focused more on trespassers and moms at school board meetings than espionage.

I spend part of my working career as a security guard for a major university. And I usually took the holiday shifts for the overtime pay. The university was always deserted on holidays...except for the Chinese students. As you noted, they were still in the labs, working away.
But I never saw any of them in the language arts building, studying poetry. So I guess we still have the edge there.

It is possible to go to Walmart, shop for normal goods, and get nothing made in China, but your point is generally correct there.
