You know... I have to wonder why these beef prices have gone where they have... I have been shopping at a little local Mexican grocery store for the past year or so and they had T-Bones on sale regularly for $3.99/# for the past couple of years and this week they are on sale for $4.49/# when Kroger and Safeway are regularly charging $6-8 a pound on steak that is not nearly as good as what I have been getting.

It is always much cheaper to produce any product if you do not have to follow government rules and regulations.

Mexican grocers have actual butchers on staff. They buy whole sides of beef and break it down on site. If they have a local wholesaler of sides of beef they can get whole sides for under $2lb this is why they can undercut the box stores who just shrink wrap meats out the box. Even “butchers” at a Kroger are at most breaking down primal cuts but never whole sides of beef or whole hogs.
