sarcasm? He didn't, because he was never indicted by DOJ. DOJ ignored the contempt citation coming from Congress, when their man Holder was cited. Makes sense, yes? Why would the DOJ ever go after itself? That just isn't done.

From a legal point of view, why didn’t he show up, blast them with good rhetoric, and assert the 5th Amendment?

The USA is in the control of a leftist dictator who is now purging his enemies: Trump and associates, Jan 6 crowd, parents who object to marxist teaching, Rittenhouse, Chauvin, Republicans in general.
The purge is as real as what Stalin did to his enemies, but the gulag is a virtual one - nevertheless effective.
