I drive by hundreds of head of beef cattle on my way to the grocery store where beef prices are up due to supply chain issues. What a system.
I did find someone nearby who raises beef cattle and has their own state inspected slaughter facility and their prices are in line with the grocery store so I'm probably going to say screw the system and start buying from them. Liver and onions, yum. Boneless chuck roast is cheaper than the stores. I'll have to ask about short ribs.

There is talk here among the deer processors in SW Pennsylvania is to go from seasonal processing to year round custom processing.
There are a lot of small farms here who raise just 20 head or so of beef cattle on a few acres, so it could be the way to go.
