That was Steven Lee, a San Francisco official and restaurant investor, as quoted in the San Francisco Chronicle last year after the city’s Board of Supervisors voted to outlaw natural gas in new buildings.
Nevertheless, they persisted. Per the Sierra Club, the quickening campaign to phase out natural gas recently notched its 50th city-level win in California alone. (Take a bow, Encinitas!) No. 50, as with some others, has “situational exemptions” for restaurants and the like, but the overall push to compel an all-electric design for homes and commercial buildings understandably has had chefs and home cooks worried, roughly for the reasons articulated by Steven Lee.
Berkeley was the pilot light of this movement. The city was the first to ban gas connections in new buildings in 2019, something the California Restaurant Association is still fighting in court. The speed at which other municipalities followed, from Seattle to New York to other cities across California, only underscores how the culture of lawmaking often is the culture of fads...

This outrageous and completely pointless attempt to ban natural gas, regulate private kitchens, and change the way Americans choose freely to live can't be attacked on the merits - EVEN THOUGH the author points out that for his wife and himself, a gas range in the kitchen is "non-negotiable".
Is that why he writes to oppose it? OH, NO!
It's because it's bad for MINORITIES, specifically Indians (dot, not feather) who need to puff roti, and Chinese who use woks. If only white Americans used woks, I suppose NR would be advising us that you can't fight progress, even though it's regrettable.
American "conservatives" have failed, over and over, to defend the nation ON THE BASIS that it's a nation. Now, it's almost too late, and if it gets done at all, it will have to be done without NR and the whole rotten conservative structure.
National Review was trash before they took off the camouflage with their “Against Trump” cover.
Of the people on that cover the only one to say he was wrong is Glenn Beck.
Great comment. Nailed it. As far as gas stoves go they’re the best for serious cooking. Electric and induction “burners” just don’t respond quickly enough. I choose a gas setup and will never go with an electric cooktop. Let some idiot try to prevent me from enjoying my reasonable, personal choice and see what happens. . .

But my point was, IT DOES NOT MATTER if gas or electric is "better".
I didn't even put my own personal preference in, BECAUSE WHICH ONE YOU OR ANYONE ELSE CHOOSES IS NONE OF MY BUSINESS.
The article was not about which was best.
It was about "The Democrats are bad BECAUSE they are hurting minorities", a window into the conservative mindset which explains why we keep losing.
That is 100% correct, nothing beats gas for cooking, it heats evenly and it’s easier to control.
We have a really nice gas cook top and oven in our kitchen, plus I have a Blackstone Griddle outside that I cook on quite often....
In fact nearly our entire house is gas, dryer, water heater, etc....
Amen. The conservative movement has grown tired and old, living on clicks generated from online articles. It's only accomplishment, post Reagan, is the shedding of the Trotskyites from the Weekly Standard crowd. The politics of populism might still save the nation, altho time is fading. Leave the conservatives to argue over spending less than the Democrats. Selling that to men and women who are being fired tomorrow for not rolling up their sleeve for a vaxx is a fools errand. The days of Buckley & Goldwater are over and it's time to leave their memories behind.
My apartment is all electric and I hate it. Once you’ve used gas and all the benefits of it electric just plain sucks!
I love cooking, just made brunch :) we have all electric, but I miss cooking on a gas stove. You have more control over temperature. Le sigh.......
Look and see who is heavily invested in (GE cough, cough) electric stove manufacturers.

Oh, I know, probably the “digging” for it is a “bad” process.
When are these electric freaks going to figure out that steam runs electricity (networks), which is best powered by - any number of “evil” things. And their batteries are created via nasty materials and processes.
My father used a wok on an electric stove. However this is just a statement of fact, not a support for limiting people’s choice of how they want to cook their food.
Yeah, I got that when I read your first comment, and I agree with it. The NR writer missed the whole point preferring to assign a “woke” drift to his lament. NR sucks. Haven’t read it for 10+ years.
I guess more clean natural gas for the rest of us.
House flipper. I converted from electric to propane. I don’t understand any nicer house using electric. I see them for sale all the time-pics. Show stopper.
As for minorities they vote democrat. Doesn’t effect them. Perhaps later it will.
