The whole wedding planning thing has gotten so far from reality, it is ridiculous. Two people in love should be able to get past this kind of thing. Starting your lives together as a married couple by diving into a massive lawsuit over a wedding postponement? The lawyers will live happily ever after.
Having myself been married to the same woman for 49 years, I can report this is nothing compared to what a couple will surely face together in their married lives.

Upside of Covid, I got out of two in-law weddings. I saved a few thousand dollars and didnt have to visit such lovely places as D.C. and Toledo Ohio. I was devastated.
Contract law: read the contract. If you want an out, put that clause in the contract - and pay what it takes to get the other side to agree.
