I buy both pork and beef from two local farmers, who process their meat a local, family-run slaughter house. The father and son running the place are true artisans.
With what I have seen these past weeks, I will try to never buy meat from the big corporates again. Its a monopoly, which screws both American farmers and consumers when trouble arises, and being good globalists, while they cant export meat processing, they instead bring in the poorest-of-the-poor from abroad to work in their plants. The workers’ families then go on the dole.
Im not going to be part of that any longer.
I bought half a freezer beef last week on the hoof.
We also have a local butcher where you roll a cart right in the freezer and just pick what you want from burger, steaks, roasts, pork, chicken, smoked meats, etc. Very nice.
