What is the religious document that defines and connects the term “Trinity” to religion?
It is NOT found in the Bible. Since it is called the ‘Doctrine of the Trinity’, the document must describe doctrine. Consequently it must be found elsewhere beyond the Bible.
As far as I can the only ‘official’ document is the Athenasian Creed.

Your being dishonest by trying to equate the LDS/St.Paul’s definition of the Godhead with the ‘Doctrine of the Trinity’.
There IS a Godhead defined in the Bible, God the Father, Jesus Christ-Son and Holy Ghost.
There IS NOT a ‘Homoousios’ 3-in-1; 1-in-3; heavenly-multiple-personality-disorder, as defined by the various Catholic Nicene, Apostolic, Athanasian Creeds.
THE TRIUNE (TRINITARIAN) GOD IS NOT THE SAME AS THE GODHEAD .... AND IS NOT DEFINED IN THE BIBLE!!!!
