Since I was giving Joe the recipe for meatballs, I recall others asking for it but I forget exactly who, so I’m covering the bases :)
Like I told Joe, use a cheese grater on hard Italian bread for the bread crumbs,
pound of ground beef. Add ground pork and/or ground veal sometimes for kicks :).
Add eggs(start with 2 and decide next time if you want more)
add a cup of grated Romano
garlic, a little or more depending on how much you like it
chopped parsley
salt and pepper
and the bread crumbs.
and a LITTLE water. Less than a cup.
Decide after a few times how much/little water, garlic, bread crumbs, chopped parsley etc. you want to add.
In the age of electric blenders you can probably take the short route on the Italian bread grating. no problem there.
Fry them a little but just enough so they are lightly browned on the outside.
Frying not necessary, can put them right into sauce, but I like frying lightly first
Again, how much you fry them before finishing them off in the pot of sauce, if at all, is up to you.
Use sausage in the sauce to add flavor to the sauce and eventually the meatballs.
