To: Freedom_Is_Not_Free

I love steaks especially Rib Eyes and Porterhouse. Unfortunately I can no longer afford them.

Every now and then I see some on clearance because they are dated. I actually like them better but even those are too high now.

I feed my dog meat for dinner. I used to get him chicken for $1.99 a pound. That is $2.99 per pound now. $1 is not exactly expensive, but that is a 50% INCREASE. I’ve only had this dog for 4 years. I am pretty sure my income hasn’t incresed 50% in 4 years, because I am pretty sure my income hasn’t gone up AT ALL in the last 4 years.

But there is no inflation, of course. Not per the US government. Beginning with Clinton, they changed way inflation is calculated so many times, and always adjusting the “official” inflation rate downward, that now the inflation numbers are meaningless.

So are the unemployment numbers. Both have been fudged so dramatically, they have ceased to have any relationship to the true inflation rate or the true unemployment rate.

And then politicians wonder why I despise government.

I have been buying untrimmed tri tip roasts from Albertson’s. They usually have them marked down to less than $4.00 per pound, USDA choice.

I roast them in the oven, uncovered, for about six hours at 225°F, to internal temperature of 165°. I save all the drippings.

I’m doing keto, one meal a day, and it lasts all week.

I slice it 1/8” thick, five slices, about one ounce per slice. Heat gently in a pan with some of the reserved fat.

Salt, pepper, some creamy horseradish sauce, it tastes like prime rib.
