In the interests of fairness. if there is going to be a separation of church and state applied to schools (as in banishing any and all vestiges of Christianity), it should apply to ALL religions.

The answer is to adopt a policy to allow any child off for a religious observance. But it seems that Muslims use their religion as a way to wedge into the civic affairs of non-Muslims and then as a way of elbowing non-believers in a power play. That is the difference between Islam and other religions. Islam has a power-oriented mindset. It appeals to power and indeed the name in Arabic means “submit”.
This is why Islam is incompatible with liberal western democracies.
