When I was in the Navy over in the Med, my mom shipped me a box of pizzelles that she made herself...when they got to me, they had been so manhandled by the Navy mailing system, COD delivery to the ship and so on that when I opened the box, the plastic bag she put them into was crumbs and pulverized pizzelle powder.

In our jet shop under the flight deck, me and my buddies tore a hole in the plastic bag and squeezed the yellow powder into our mouths...delicious!

I’m off for home with 2 stops for my Mom...her list is almost complete. Just have to get a big popcorn tin for my Dad on Friday, then her list will be complete.

A Supporting Role

After the American TV personality Ed McMahon died in 2009, one newspaper headline read, “When it came to being the No. 2 man, he was No. 1.” Best known for his 30-year tenure as Johnny Carson’s late-night sidekick, McMahon excelled at helping Carson succeed in the spotlight. While most entertainers strive for top billing, McMahon was content with a supporting role.

When the apostle Paul gave instructions about how to exercise our gifts as members of the body of Christ (Rom. 12:3-8), he affirmed the value of supporting roles. He began by saying that we should have a realistic opinion of ourselves (v.3), and he concluded with a call to genuine, unselfish love: “Be kindly affectionate to one another with brotherly love, in honor giving preference to one another” (v.10). Or, as J. B. Phillips translates it, “a willingness to let the other man have the credit.”

Our gifts and abilities come to us by God’s grace and are to be used by faith (vv.3,6) in love and service for Christ—not for personal recognition.

May God grant us the ability to embrace with enthusiasm the supporting roles to which He calls us. The ultimate goal is His glory and not our own.

Ingredients

1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar or 1/4 cup honey
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
Granulated sugar

Directions

1. In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined, scraping sides of bowl occasionally. Beat in the egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. If necessary, cover and chill dough about 1 hour or until easy to handle.

2. Preheat oven to 375 degrees F. Shape dough into 1-inch balls. Roll balls in additional granulated sugar to coat. Place balls 2 inches apart on an ungreased cookie sheet. Using the tines of a fork, flatten balls by making crisscross marks on top. Bake for 7 to 9 minutes or until bottoms are light brown. Transfer to a wire rack and let cool. Makes about 36 cookies.

Coated Pecans.................very simple AND YUMMM-MEEEE!

4 cups whole pecans

1 cup sugar

1 egg white

1 tsp water

1 1/2 tsp cinnamon

1/2 tsp salt

beat egg white and 1 tsp water until foamy...stir in dry ingred. then add pecans...coat well.....spread on cookie sheet and bake at 300 for 45 min stirring about every 15mins....just let cool and store in airtight container.

Tip..... strongly recommend doubling the coating recipe to pour on the pecans for great coverage.

Delicious hot beverage for Christmas or anytime. Cost a fortune at Starbucks——cheap and easy to make at home. Must use Earl Gray tea for the proper flavor.

LONDON FOG LATTE / ONE SERVING
Heat mug of milk (can use skim for fewer cals). Steam hot milk til frothy. Sans steamer, buzz the milk in blender a few seconds——will froth up nicely—careful with hot beverages.

Steep Earl Gray tea bag in hot milk 3 minutes. Add vanilla syrup, fave sweetener.

Drink up.
