If Israel sank these ships, wouldn’t the Suez Canal be blocked to ALL shipping for a considerable length of time?

Crude oil and gas prices would zoom higher.

Depends on the method of sinkage....may be not enough large pieces left to block shipping lanes.

Donning my tinfoil hat:
Imagine an Iranian ship moving throgh the canal. Suddenly, a massive explosion! At precisely the worst location, the ship sinks. Passage through the canal is disrupted! Oil prices skyrocket.

If Iran scuttled their own ship, and blamed an Israeli submarine, they could probably get a lot of bang for the buck.
