At this week's National Grocers Association convention in Las Vegas, celebrity chef Philippe Parola was touting his new favorite fish.

'[It has] 70-percent more Omega-3 than in catfish and tilapia," an animated Parola told an assembled crowd at his booth. "No mercury because it's a filter fish."

Asian Carp, Asian Carp, I thought all carp were from Asia.

I believe most are but I think there are a couple of native species. Not sure, it requires study.

Eat a sewer bass? I think I’ll pass.

I’ll take a nice catfish fillet fried in a cajun seasoned cornmeal coating....or, a nice salmon sauteed in a lemon juice pepper corn reduction.

I learned this from a polish guy.
keep alive and put in a kiddy pool for several days.
cut the back off of fish above the mud stripe.
backbone and all.
grind and form into breaded fishcakes.
the bones dissolve when cooking.

Prepare it like they do at this restaurant in Omaha. They make a series of cross hatched cuts straight to the backbone, it makes the tiny peripheral bones edible when breaded and fried. Of course the flavor part is a different story but I used to put mine in a clean kiddie swimming pool and feed them corn for a couple of weeks and then eat them, makes them almost neutral in flavor.

To keep the carp at bay, officials have used poison and electrified fences at critical points along the Illinois River, which connects to Lake Michigan. The federal government is now considering closing part of the river altogether, but barge captains and other business owners say billions of dollars in commerce would be affected.

I wrote about this on my blog last weekend. The Feds want to spend something like $78 million to control the carp. My idea was to hold a series of fishing tournaments, with the winner earning, say, $10,000. Problem solved. And people would have fun doing it.

MY recipe for carp. Find a pine board that will hold the carp with plenty of board showing all around the carp. Take two large nails and nail the carp to the board. Preheat your oven to 375 go out into field and find some fresh cowpie’s cover the whole carp with cowpie’s cook in oven till it smell’s done remove from oven throw the board and carp away and eat the cowpie’s. MMMM MMM good

I always heard to cook carp, you lay out on a pine plank, season to taste, cook in the oven for an hour, then throw the carp away and eat the pine plank.

Who eats catfish and tilapia for the Omega-3? There's almost three times as much Omega 3 in a single egg yolk than an entire tilapia filet.

Isn't the purpose of a filter to get dirty? Would you expect a dirty vacuum cleaner filter to contain no dirt? Would you eat a used oil filter? An air-conditioner filter?

A 3oz Catfish fillet has about 0.3 grams of Omega 3. 70% more would be a total of 0.51 grams. Not bad but I’d rather eat another ounce of Catfish. I eat about 4-5 Salmon fillets a week and they can range from 1.1 to 1.9 grams of Omega 3.

I had about 30 hours of biology way wat back in college, and I might be off here, but did he say that filter fish would be low in Mercury? I best remember that it is the opposite. Bottom feeders and debris fish absorb the sediments which are high in metals. Good examples are catfish, shrimp and crawfish... they are an example of metals concerns.
