I know that Doctors must work with cadavers to learn their trade. But so must mortitians. I just don’t like the exhibit. Have just a little respect for the dead.

Not just doctors and morticians. Studying cadavers is also important to art students. When I was in college, I had anatomy classes in both the anatomy/physiology and art departments... and there were human cadavers in both classes.

IMO, studying human anatomy just isn't the same when using a plastic model.
