It is indeed a shad (sic) commentary that more people have not had the opportunity to experience the fine and subtle flavor of the shad. The chance to bring home a shad or two was worth helping my neighbor tend his nets in the winter when I was a boy. It was cold, wet work but the pay was great.

Not my favorite fish, but it really depends on the cook.
Lately Mrs. Joisey and I have been discovering the joys of pan seared Flank Steak, with a variety of marinades. The best so far is a combination of Korean barbeque sauce, Jack Daniels, with fresh chopped chives and scallions.

The Chinese have a saying, "One of the twelve tragedies of the world is the bones of the Shad."
The shad has a delicate, almost sweet white flesh. There are very many small bones that must be removed. Even with very careful separation on your plate, many end up in your mouth. It is impossible to remove all but the largest prior to serving.
Shad season on the Roanoke and Pamlico rivers (NC) runs from February to early May with a peak around late March.
