The victim would be European-American (or European American, as they used African American, not African-American--one is an American modified by a relation to some continent, and the other is a compound noun). Caucasians would be people from the Caucasus region (apparently how the term is used in Europe).
Or, you can go out 'pc' and use 'American of European descent' and 'American of African descent'.

Our children can trace their ancestry back to both Africa and Europe. We just tell them they're Americans. Their ancestors came from those continents. They were born here.
Of course, the eldest, 11, has come to view himself as black, anyway. Labeling oneself as black or white is practically unavoidable because those are the labels everyone else wears and puts on him.
