Why is the federal government regulating local resturants? The fed's need to tell them about this thing called the 10th Amendment and that's not the feds job.

Not that I'm saying that we need a law, but if the government requires nutritional facts to be printed on prepacked foods, why doesn't it require restaurants to disclose nutritional facts on prepared foods? Again--not that I'm saying we need a law--but some consistency would be nice.
When I go out to eat, I usually like to check online to see the nutritional value of the food that I eat, and I find it super annoying when the information isn't posted. Quizno's, for instance, is notorious for keep the nutritional information of its food secret, probably because the food is outrageously bad for you. It would be nice if the restaurants stepped up and put all this information online.

Do these people wake up each day and think "Time to save all the stupid people from themselves, aren't I great?!" or "Time to stick my nose in everyone else's business?"

True, it is nobodies business.
But when we have universal health care, it will be everybody's business. Coming soon to a country near you!
