Low carb macaroni???? This I might could learn. Dreamfields sells it but you might have to get it online b/c I know that the local grocery store here only stocks their spaghetti and penne. I also have to order their lasagna online to get my lasagna fix.

Rotini Greek Salad

8 ounces Dreamfields Rotini
1/2 cup chopped red onion
1/2 cup sliced black olives
1/2 cup (2 ounces) Feta cheese, crumbled
1/2 cup chopped green pepper
4 ounces Roma tomatoes, quartered
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
Salt and pepper to taste
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
Directions:
- Cook Rotini according to package directions; rinse in cold water and drain well.
- Whisk together olive oil, red wine vinegar, salt, pepper, basil and oregano until well blended.
- Toss pasta gently with vegetables and dressing mixture.
- Refrigerate before serving.
Makes 7 side dish servings

Traditional Lasagna Dreamfields 16 oz. Lasagna

Dreamfields Lasagna
1 tablespoon olive oil
1 clove garlic, minced
1/2 cup chopped onion
1/2 cup chopped carrots
1/2 cup chopped celery
8 ounces sliced mushrooms (optional)
8 ounces lean ground beef
8 ounces Italian sausage
1 teaspoon salt
1/2 teaspoon ground black pepper
1 (16 ounces) container Ricotta cheese
3 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
4 cups Marinara sauce
Directions:
- Prepare lasagna according to package directions. Drain and rinse in cold water; drain well.
- In a large skillet, heat olive oil over medium-high heat and sauté garlic, onion, carrots, celery and mushrooms until tender, about 5 minutes; remove from heat. Transfer vegetables to another dish.
- Using the same skillet on medium heat, brown hamburger and Italian sausage, season with salt and pepper, stirring and crumbling meats. Cook about 10 minutes or until no longer pink. Drain juices. Mix in vegetable mixture.
Preheat oven to 375 degrees F.
Spray 13x9x3 baking dish with non-stick cooking spray.
TO ASSEMBLE:
- Spread 1 cup of marinara sauce on bottom of baking dish.
- Layer 3 lasagna noodles, 1/3 of ricotta cheese, 1/2 of the meat mixture, 1 cup marinara sauce, 1 cup mozzarella cheese.
- Layer 3 lasagna noodles, 1/3 of ricotta cheese, 1 1/2 cups marinara sauce.
- Layer 3 lasagna noodles, 1/3 of ricotta cheese, 1/2 of the meat mixture, 1 1/2 cups marinara sauce, 1 cup mozzarella cheese, 1/2 cup Parmesan cheese.
- Cover pan with tin foil and bake for 45 minutes. Remove tin foil and bake another 10 minutes. Let stand for 10 minutes before cutting.

Spaghetti Pomodoro
Spaghetti with Olives, Capers and Tomatoes
Serves 6

When fresh tomatoes are abundant in the summer and fall, I will use them. Because this is a primary sauce, I use canned tomatoes when fresh are no longer available. You may omit the red pepper for milder flavor or substitute Kalamata olives for the capers and black olives. Chef Antonio
This sauce may be refrigerated up to 48 hours or put in the freezer up to 2 months.
Ingredients:
1 tablespoon olive oil 2 cloves garlic, minced 1 tablespoon red onion, chopped 1/4 teaspoon hot pepper flakes 1 can (28-ounces) whole peeled tomatoes 1/2 cup sliced black olives 2 tablespoons capers 1/2 teaspoon dried oregano 1 tablespoon fresh basil, chopped (or 1 teaspoon dried) 1/4 cup white wine or water 16 ounces Dreamfields Spaghetti 1/4 cup Parmesan cheese

Directions:
- Heat oil in a large skillet over medium heat. Cook garlic, onion and pepper flakes 5 minutes or until sizzling hot.
- Drain tomatoes and break up. Add into skillet along with olives and capers and cook 5 minutes. Add oregano, basil and wine, cook on low for 10 minutes, stirring frequently.
- Prepare pasta according to package directions; drain well. Toss pasta with sauce and Parmesan cheese. Serve immediately.
