Ohhh.. That looks GOOD!

The first (Lesser Canada) goose I ever got, I spent forever plucking the thing. It was pretty good when I roasted it.

What do you use as a stuffing? How 'red' is a farm-raised goose? Wild ones are very dark red.

Last year I did sage and onion, add a fresh onion and tin of mandarins. It was quite nice but am open to suggestions for this year.

Farm raised are fairly pale not much darker than a free range chicken

The colour when cooked is very similar to young rabbit.
