Eve and I used to discuss apple pie recipes. I kept telling her not to use sour apples, but NOOOOOOOOOOOO, she had to do it HER way.

I have found though if I use a sweet dessert apple for either stewed or applesauce recipes the flesh does not cook well maybe it is only certain varities that that happens with and I have been unlucky
