Sour apple = cooking ?

I have found though if I use a sweet dessert apple for either stewed or applesauce recipes the flesh does not cook well maybe it is only certain varities that that happens with and I have been unlucky

Well, now, that's EXACTLY what I kept telling Eve--"You want them to be sweet but firm." But she listened to the snake and called, "Adam! YouHoo, Adam." And that was the beginning of women's disappointment.

You're right, when making applesauce, apples are definitely not equal. Apples abound here so there is a wide (and confusing) choice.

I've seen Granny Smith apples recommended for making applesauce. This cook says crock pots work well for making it, and thinks Red and also Golden Delicious apples are a least favorite for making applesauce.

This person says, "Although McIntosh is traditional, feel free to experiment with different types or combinations. It is also possible to substitute one or more pears for apples. Bartlett pears seem to work best."
