Two questions. One, why would the Today Show ever book someone like Coulter as a guest? And two, why would Coulter ever appear on something as biased as the Today Show?
Two - She is a best-selling author - with a new book to sell.
ratings, ratings, ratings - she attracts conservatives who respect her, and liberals who hate her.
There is some sort of unspoken rule in the big networks that if you have a book to hawk, you get facetime on the shows most likely to be of interest to your readers. Lib or Con doesn't seem to matter. It's like, "One day I might need to hawk my new book, so I'm gonna let you hawk yours."............
On Today's part, it's all about ratings. Ann's books sell! And for Ann, she's trying to sell a book, and she gets a very large forum to do so.
Why would Ann go on the Today Show? One of the following three reasons:
(1) Believe it or not, a lot of people actually watch the Today Show. I'm not sure why, but they do.
(2) She enjoys smacking Matt Lauer around.
(3) Both (1) and (2).
And two, why would Coulter ever appear on something as biased as the Today Show?

Maybe for the same reason Jesus told his disciples to go where the sinners are? Being on with Lauer she's reaching an audience of ignorant (not necessarily stupid, but ignorant) people, a few of whom might convert to right thinking when presented with logic.
