Taz's Pretty Good Stretch a Roast.
Large Beef Roast...Chuck, sirloin or any cut you prefer.
Day 1
Roast Beef with onions, celery, carrots and potatoes.
Add a salad , and a bottle of red table wine.
Divide the remains into serving sizes appropriate for your family and keep the broth. Can freeze for jump starting meals.
Day 2.
In a large skillet Saute onion and chopped garlic in olive oil. Add a 1 lb package of frozen onion, and peppers. Saute.
Season to taste with cumin, red pepper, chilli's, salt and pepper. Fork shred the beef and stir in.
Warm flour tortilla's in the microwave for about 10 seconds.
Sprinkle liberally with shredded cheese. Can use Tex Mex Mix, Cheddar Jack, or what ever you have.
Spoon the meat mixture down the center of the tortilla and roll.
Serve with salad, salsa of choice and sour cream.
Day 3. In a large skillet. Add a little oil and saute a thin sliced onion. When just about transparent add a container of the beef still frozen Add a 4 ounce can of sliced mushrooms. As it thaws take a 1 lb package of frozen broccoli and thaw in warm water.
Add water to the skillet to make 2 cups..Lift out the beef and slice it thin. When the broth comes to a boil add a package of Knor Beef Stroganoff noodles...Cook per label instructions. Nuke the broccoli until it is hot and drain.
Stir sour cream into the beef mixture. Gently add the broccoli.
One dish....Has it all.
Day 4. Use a large pot. Add a container of the beef. Coarsely chop an onion, 2-3 stalks of celery, Add water or beef broth to make about 1 quart of liquid. Lift out the beef and cut into small chunks. Add barley, parsley and a 4 oz can of mushrooms. Simmer till done. Quick cooking barley will take about 30 minutes, the regular stuff will take about 2 hours.
Day 5.Fix something else because you are sick of beef.

I always save some juice form leftover pot roast..
It makes the the BEST darned french onion soup you've ever had..
I'll post some of my recipes tomorrow!
