Welcome To the Canteen Cook-Off Shake Rattle and Roll Jerry Lee Lewis Chubby Checker Bill Haley Come on, Mojo! Quit slacking and participate, will ya? (Talk about a slacker!) Ahem! Now where were we? Oh Yeah! This is a fun, friendly cooking contest open to anyone who would like to participate! There will be prizes! Imagine dat! First, second and third prizes, and honorable mention! The prizes are cookbooks from Ms. B's extensive collection! First prize: Patti Labelle's Lite Cuisine Second prize: Greatest ever Thai Recipes Third Prize: An appetite for Passion Honorable mention: Pizza by James McNair ** Winners will be announced two weeks from tonight! ** Entries can be main course, desserts, or side dishes! ** Please post your entries to this thread by midnight, EST on Feb. 17, 2006. ** Make sure Ms.Behavin is in the "To" line of your post to be considered for a prize! Woo-hoo! Our panel of impartial (?) judges will have the final say! I love cooking with wine! Sometimes I even put it in the food! Have fun!!! We will never forget who we owe our Freedom to! We are here first and foremost for the Troops! Please, no politics in The Canteen! We want the Troops to be able to relax, relate and rest! Mom always made these for us - she got the recipe from my Aunt
FUDGY BROWNIES
Important: DO NOT BEAT! Beating introduces air into the batter, and makes the brownies dry, not fudgy.
4 eggs
2 C. sugar
1 tsp. Salt
1 tsp. Vanilla
2/3 C. butter
5 Tbsp Cocoa HEAPING
1-1/2 C. flour
2 C. chopped nuts (Pecans, walnuts, or hickory nuts taste best)
Stir eggs with spoon. Stir in sugar, salt & vanilla, then stir in butter and chocolate, and finally stir in the flour and walnuts.
Bake at 325°F for 30-35 minutes in a 9x13 pan. (Or until toothpick inserted near center comes out clean.)

One of my favorite childhood side dishes...
Mom's baked beans
Beans: small is 15 oz so 2 of the small or 1 of the next size
1/2 cup tomato catsup
1/2 cup brown sugar
a squirt of mustard
lil smokies
pepper to taste
bake till start to darken and thicken 350 in oven
keep them stirred
on the side or on the upper rack on the grill
at least 1hr
glass, or metal pan tinfoil throwaway pans
spray pan before putting beans in
cover with tinfoil or lid

Taco Soup
1 pound ground beef
1 onion, chopped
1 can pinto beans
1 can kidney beans
1 can corn
2 cans stewed tomatoes
1 can Ro-Tel
1 package taco seasoning
1 package ranch dressing
4 cups water
1. Brown ground beef with onion; drain.
2. Drain pintos, kidneys, corn. Add to meat.
3. Drain tomatoes, Ro-Tel; add to meat. Add dry mixes.
4. Add water.
5. Simmer.
It's the ranch dressing that seems to make this recipe so good. I'm making this tomorrow when I get home. It cooks up fast if you want it; it's also ideal for a crockpot meal. Dump everything in and leave it on low all day!
