Since there is huge body of evidence supporting evolution and the theory explored infinitely deep, what projections can be made as to how species will evolve in the future?

Excellent question.

Since evolution says that humans evolved from monkeys, it follows that it must be able to predict what humans will evolve into next.

Your strawman arguments might draw in others, but I am now on the scene and I won't tolerate logical fallacies (IOW, all that creationists can muster).

What's the weather going to be like 1,000,000 years from tomorrow?

Without knowing the conditions, you can't know what adaptations will be favoured. and then a massive meteor strike could randomize everything

Depends on the environment they have to adapt to. That is essentially unknowable.

I can, however, make a prediction about human evolution:

Our descendants, whether human or another species, will not have wisdom teeth.

Proof: Even with modern dentistry, people still occasionally get fatal infections from impacted wisdom teeth before they have had any children. This eliminates one copy of the genes responsible. Eventually (depends on how often this happens, which is impossible to predict), the genes are gone.
