I live in North Texas - I've never heard of Kuner kraut. My husband and I lived in Pittsburgh for a couple of years - they had some great kraut there.

Not many people like kraut, but if it's cooked correctly, it's delicious. I think the bacon/pork flavors are what keep it from being bitter. I'm going to have to try your recipe - it's a little more elegant than mine!

We love to have mashed potatoes with our kraut, too. Is that some sort of a tradition? My mother is french, my father is german and I was born in germany. She always made mashed potatoes with her kraut. I have often thought of mixing the kraut with the potatoes and some mustard to make a kraut potato salad.

When I spent a week in Germany in 1990 they always seemed to serve mashed potato with sauerkraut

I know there is an Irish dish named Colcannon that is mashed potatoes and cabbage...

I make a type of "soup/stew" with Keilbasa, and potatoes and cabbage...and a touch of vinegar...yum.

My mother was of German background. Her parents were both born in Germany and her mother came to this country at the ripe old age of 14 to be a domestic for a wealthy family. That is where the sauerkraut for us came from. Mashed potatoes? Delicious anytime anyplace. Play with the ingredients as there really is no set recipe. It's just the mingling of all those wonderful flavors that make it mouth wateriing delicious. In fact, we are heading over to our daughter's house in about an hour to enjoy the dinner.

Go to Kuner on search and read about them. They began in 1883 in Colorado. :) Interesting reading. Anyway, enjoy today and the food that begins our New Year. Good health and happiness in the New Year!!!

By the way, our method of cooking sauerkraut is not elegant by no means. :) It's just a down to earth, fill the tummy type food that is filled with happy childhood memories. :) Main thing is to cook the pork according to roasting times for the weight of the pork loin then cook the kraut with it. Mmmmmmmmmmm good. :) Had it today and wwe are all satisfied that we once again welcomed in the first day of the New Year with our favorite food and will finish the leftovers tomorrow. :) Happy Eating.
