I never have made stuffing with 2 eggs. What's the purpose of the eggs?

I would think to maintain some moisture.

What say you Carlo so I can experiment : )

Eggs work as an adhesive, holding everything else together while they cook/bake.. Please don't be queasy about using raw eggs if you intend to thoroughly cook your food, and use relatively fresh eggs, all this fuss about dying over eggs is just plain goofy :)

Yum...stuffing...my favorite part of the meal. My Grandma and Mom have always made stuffing with eggs and lots of melted butter; my husband's family did not.

The eggs give the stuffing a more "bread pudding" consistency; much more moist.

I've gradually converted the hubby, but he likes his stuffing dry...so we cook it in a pan (instead of the turkey); he gets the dry stuff on the edge of the pan.
