I never have made stuffing with 2 eggs. What's the purpose of the eggs?

Yum...stuffing...my favorite part of the meal. My Grandma and Mom have always made stuffing with eggs and lots of melted butter; my husband's family did not.

The eggs give the stuffing a more "bread pudding" consistency; much more moist.

I've gradually converted the hubby, but he likes his stuffing dry...so we cook it in a pan (instead of the turkey); he gets the dry stuff on the edge of the pan.

Once, I think it was about 4 years ago, I started a thread about "do you cook the stuffing inside the bird of not?"....It ran several hundred replies, and sort of started this whole Turkey day tradition...
