Unfortunately, raw dairy is illegal to transport across state lines for sale anyway. If I lived down South or out in east of Long Island, I'd have one dairy cow and one dairy goat and chickens.

It depends on the state. New York laws are VERY STRICT, while Washington State is considerably less restrictive when it comes to shipping raw milk cheeses across state lines. The FDA only requires that cheeses be aged 60 days, so young raw milk cheeses (like Brie) are out of the question.

I know that the FDA does not allow the shipment of raw MILK across state lines ANYWHERE, but if you drive just a few miles up the Hudson or towards the Catskills there are plenty of farmers who would be more than willing to sell you raw milk.

I had raw milk as a kid...it was great...but now as a grown up, I am kind of lactose intolerant...do very little uncultured milk, and if I do too much of it at a time, forget it, I will have a sick stomach all day. I can even tell if I ate too much cheese.

Yogurt seems to work best for me. Funny how that goes.
