I married my Yankee up here in Philadelphia-Yankeeland. But our wedding lunch was pure southern. We had a bbq where we supplied many of the recipes. We warned people in the invitation so that they wouldn't wear their best clothes; instead, they could be prepared to roll up their sleeves and eat. I had one person tell me it was the best food he'd ever had at a wedding--and it was cooked by a college kitchen staff! They just had the right recipes!
Actually, I adore Cajun, Tex-Mex and BBQ.
That is considered a sin in Texas.
duckie & i have a place in SA & i go there (the one near RETAMA) within 6 hours of crossing the Bexar county line!!!!

My brother in college had the same thing for breakfast every morning. 12 corndogs dipped in ketchup, musturd, and mayo.
Grandmother made cooking look so easy! I have no common sense when it comes to cooking. It's disasterous.
My other grandmother had a cook (deep south Ga now), who's sit in the corner (never at our table) and eat the fatty portions of the meat. Used to make me gag, and she lived into her 90s.
Good living, fresh air, rising at sun-up, and reading the Bible.
In the days of slavery, kitchens were often separate structures, apart from the main house.
(Among other things, it cut the fire risk).
Poorer folks cooked outside, weather permitting (over a fire). You do not need an oven to fry food, like you do to bake it (not even a Dutch Oven).

My husband grew up at Lake Houston, which was where the Tom Houston employees could take their families for fishing, swimming, cook outs, an all day outing. The pool was shaped like a peanut and was fed by an artesian well. It was as long as two olympic size pools. The place was a wonderful retreat.
As a Southerner what we have done is eliminate the "frying."
We broil, bake or barbecue our chicken, fish, pork and beef.
And we cook with olive oil.
The same great taste and it's healthy on top of it!

That's funny, real funny maybe you should try out for the the Comedy Channel. The reason Southern people fry things is that until recently (my childhood) there were no alternatives to LARD. Geez, I grew up with everything fried in bacon grease. Everything! If it wasn't fried it was baked in a pan smeared with LARD. I'm 55 now and I've got a 20% blockage in one of my hearts arteries. It's genetics pure and simple.
We only occasionally eat Southern anymore (we live in Colorado) but my mouth waters thinking of Turnip Greens, Black eyed Peas and Ham. God help me but I do love it.
Oh, pass the Tabasco sauce.
baked grits with blue cheese.
great with quail.
Two Observations:
1. The Texas health drink: a double shot of Beam and diet Dr. Pepper.
2. Is Sen. Kennedy a secret Southerner? Or is he what they used to call "a Northern man with Southern principles?"

Me too! These folks in Colorado don't know about barbecue. They advertise "real southern barbecue" but it ain't even close.
Rudy's has the best atmosphere ever. And I love how they slop the meat on brown paper, and hand you a loaf of bread. The first time we went there, we looked at each other and said HUH?
It was great.

only if it's redeye gravy....she uses fresh tomatoes and bacon drippings with flour....it's great!

geez am I hungry. The salad I brought is gonna have to go. I'm out to find some real food.
