Sorry. Very little experience here making preserves. Except for testing one recipe sent to me by a friend (for zucchini marmalade that I included in a cookbook), any time I've made it, I've used the instructions that come with Sure-Jell. You might check their Web site:

That method uses less sugar, too! (I may try it with Whey Low so I have some lower carb jelly I can eat!!!)

Sure-Jell/Certo is the best. I usually use Certo. Only ever had one batch not turn out...and of all things, it was APPLE Jelly, which should gel even without added pectin! Go figure!!
