With high cholesterol and fat-filled yolks, eggs once suffered from a reputation as artery cloggers. But recent reports have shown they are healthier than previously thought.

It's high time we got over the notion that eating a food that has cholesterol in it results in high cholesterol. If you eat a diet very low in cholesterol, your body will manufacture it. there is also a genetic factor - there are people who follow a low-fat diet, and yet have sky high cholesterol levels. My husband is allergic to poultry products, so we do eat a lot of red meat. Guess what? We both have very acceptable blood chemistry levels. So, I tend to ignore all the warning about fats in foods - the High Cholesterol and Saturated Fats warnings. As far as I'm concerned, the real culprit are the transfats found in commerical baked goods and in margarine.

Egg yolks have a high concentration of arachidonic acid. You can eat all the cooked egg white you can stand, but limit yourself to a yolk or two per day. The cholesterol is not the problem.
