I really feel sorry for all of the small businesses that are getting caught in the center of these changes. Everyone continues to think of this as a fad. Empirical evidence aside, it is a seismic shift in 3 generations of accepted thought, bolstered by a medical community that has too much invested in their failed theories.. sad.

They could and really should change their ways, there are ways to bake LowCarb breads, and I know hundreds of dieters that would jump at the chance to buy affordable breads again..

Often overlooked is the fact that bread and grains remain an important part of the federal government's diet guidelines.

It's not "overlooked." It's considered, and rejected.

Now, I'm not an advocate of long-term Atkins use. I favor more of a moderate diet. However, the government's pyramid-scheme diet was an outrageous lie perpetrated on the public. Why they did so is a topic for discussion on its own.

It's seldom that I eat bread, as is it seldom that I enjoy lobster... but when I have bread, I want a fine crusty Italian loaf... not something from Albertson's. I'd hate to see the fine bakeries go by the wayside.

Tonight for dinner, while the rest of my family had regular homemade pizza, I had two low carb tortillas (from La Tortilla Factory) baked, one with red sauce, mozz, black olives and turkey pepperoni and the other with mozz, feta and spinach - 2 mini pizzas, absolutely delicious without 95% of the carbs. Outstanding.

My local grocer is advertising "Atkins bread" at $4.00 a loaf. Don't know the contents but I will certainly check it out and let you know.

I just made two loaves this evening...we've been collecting and ripening persimmons for a month now. It's great!! My one-year-old son loved it.---

Persimmon Bread

Makes 1 loaf

2 eggs
1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
½ cup vegetable oil
1 teaspoon ground cinnamon
1 cup persimmon pulp
½ cup chopped walnuts
1 teaspoon baking soda
½ cup raisins

DIRECTIONS

1. Preheat oven to 325º F. Oil a 9”x4” pan.
2. In a small bowl, combine flour, cinnamon, salt, nuts, and raisins.
3. In a large bowl, blend eggs, sugar, and oil.
4. Mix baking soda into pulp, and add to sugar mixture. Fold in flour mixture. Pour batter into prepared pan.
5. Bake for 65-75 minutes, or until tester inserted in the center comes out clean.

For all you dieters out there: I eat mine with GOBS of real butter. Enjoy!

The reality is that America is waking up to the dangers of too much processed sugar and grain in their diet. The Atkins diet is just part of this. I've now seen low carb milk in the stores and the Atkins company has had low carb breads for sale for years now. The shift has happened. Now businesses can adapt or die.

Statistically there are not enough people on low carb diets to put a dent in the humongous bread business. This is special interest whine and media filler.

We need fruits and vegetables more than we need grains in our diets.

When do you think the USDA will ever re-work the food pyramid? It drives me nuts when I am helping in a classroom and all those grains, starches, pastas, etc. form the bottom layer. Yuck!

I want to say to the teachers -- don't you realize that you are teaching the wrong nutritional facts here?

Perhaps they can consider returning to whole-grain products and ditch the white flour. That's half the problem with most bread today - the white flour might just as well be pure sugar.

The only bread I have is at communion. I miss it, but I don't miss the 30 lbs I have already lost!

Thanks for trolling for this type of article and hauling it over here.

The article just yells out the stupidity of some bread / pasta / etc. makers. Adapt or die (businesses, that is). Not a difficult lesson. If the breadmakers hadn't gone to the junky refined flour in the first place, America wouldn't be dissing them when presented with an alternative.

If she wants to stay in business, she's going to have to learn. There are at least 3 brands of lowcarb bread available in my area, so I know it's not impossible.
