Thank you for the link. However, I dont know about some of the statements in it. The Japanese were reportedly very restrictive on exporting their Kobe cattle. It is doubtful that they would allow Americans to purchase 120 animals.

From what I'm told, the Kobe stock was exported against the will (and knowledge) of the Japanese government.

Okay, you keep disrespecting Paul Proudhomme, and we may have to come to blows. I have all of his cookbooks (So the women think I know what I am doing) in my kitchen.

Don't know about the background on them. I get my beef from my uncle. He grass feeds them, then sugarbeets and a little grain to marble. Last year it was Red Angus, this year, I couldn't even pronounce the name after he told me twice. I've gone through about half of it - what do you know, we're a little over half-way through grilling season. :^)

I like Paul Prudhomme. I used to collect Louisiana-style cookbooks when I lived in New Orleans and have many.

My method of devising a recipe is to find several in different cookbooks that look good and sort of improvise using them for guidance.

But even my dad buys Savoie's dark roux in a jar. Or maybe he uses Bootsies. I can't ask him, he's somewhere in Mexico on vacation and his cell phone won't pick up.

a little butter is all that's needed. We never put sugar or syrup on our spoonbread. We also ate only white corn and white cornbread. Yellow corn is for pigs- not people my Grandma maintained. We ate white gravy with sausage, fried chicken, pork chops etc and biscuits at every meal. Everything was fried or boiled. We drank sweet (really sweet) tea. My Grandma also made fried apple pies. They were made with her own dried apples. I have never been able to duplicate this recipe. It's a miracle we are not all diabetics. My Mom says she never had broiled steak until she married my Dad-a yankee. He thought he'd died and gone to heaven when he tasted my Grandma's cooking. Recently, I made my kids and hubby an old fashioned fried chicken dinner- with mashed potatoes, biscuits, white gravy and greenbeans cooked with fatback for about six hours. We finished off the meal with sweet potato pie.

On weekends-Sunday dinner usually- I cook southern meals like my Grandma (Mom did not like to cook, sew or anything domestic) taught me how to cook. Can't eat like that all the time though-you would weigh 500 pounds! I can make a mean sweet potatoe pie. I do make long cooking grits for my husband. The kids and I eat spoonbread. My hubby is a yankee from the Bronx. He tried grits at a restaurant in Florida and loves them. He does put syrup on his grits. Please don't shoot him. He has good qualities-really.
