Guess I ought to clarify some of my thoughts in the previous post. I didn't recognize the names of some of the tools... I certainly wouldn't recognize the names of the chefs since John is the only one with whom I am acquainted.

Next week, I'll be going to the Southwestern Foodservice Expo on Monday and Tuesday. I'll be getting to see a whole lot of cooking equipment that I've never seen, even in books.

You can get an idea of what it is here at:www.swfoodexpo.com.

Chef got us VIP admission for free. I've already got my badge. I look forward to the free food, goodies, and (of course) the occasional free beer. ;>)
