Hey - I like this thread........ I have to tell y'all about my experience in Yankeeland...... the caf at work was holding a contest for a recipe for Cinco de Mayo....... I entered two..... both were excellent...... one is a chile relleno casserole (and if you ask real nice I might even pass it along to ya)....... did they chose an authentic Tex-Mex recipe? Heck no, they chose this chicken enchilada wrap thingy that had a flour tortilla (yes I said flour tortilla claiming to be an enchilada!!!) and asparagus......... yep, a chicken enchilada wrapped in an uncooked flour tortilla with asparagus......... I give up on trying to teach these people about mexican food.........
