Oh man that sounds wonderful!! I think I'd like that pecan crust! I'll have to give it a try. Will it also with low-fat cream cheese?
Should work fine with neufchatel (sp?) cheese, aka the low-fat stuff but it is higher in salt.
Pecan crust for the 8-inch pan was (iirc) 1 c pecan meal, 1-2 tbs melted butter, and 1 tsp splenda. Pressed into place and toasted lightly before putting the batter in the pan.
