Our first thread ( New Zealander builds Hobbit hole ) reached 4,100 posts, and we thought that was big. Our second thread (The New Hobbit Hole ) held us for over 48,000 posts, and we loved it dearly. We talked about moving to a new thread for the last 38,000 posts, but we are really slow to muster! Finally, the time has come. Tomorrow (at 12:01 am, to be precise!) The Two Towers comes out, and we start a new chapter.

Finally, I just half stood, then threw one leg over the side into the shallow water. Worked like a charm. Just call me 'Grace'. I have found NO graceful way of getting out of a kayak. Even off a sit-on-top cause there is always wallowing.

My Mama used to bake a bunch of sweet potatoes at one time; way too many for the meal. She would then take the leftover taters and slice them crossways and fry them. Now THAT'S some good eatin! I would imagine your yam sticks taste very much the same.Gees, I alway got my sweet taters from Grama too. But boy that sounds good and homey.

I'm thinking of cooking a hunk of salt pork with my greens... Yes, you should do this.
And the bacon. The bacon grease needs to be cooked into the greens. If you want crunchy bacon topping then fry the bacon first in the pan you're gonna cook the greens in and then add anything for the greens to that grease.
But, it's good if you cook some onions in that bacon grease before you put the greens in.
And by all means, use salt pork or ham also. If you've got any ham, even canned ham or lunch meat ham then cube up some and let it simmer along with the greens.
And always put a little vinegar in your greens. Cuts the bitter. And makes 'em real real good.

Yes and yes.
Are you makin' 'em now?
I use my big 6 qt. pan. Fry the bacon in it first.
Brown the onion in the bacon grease.
When the onion turns good and clear then I add the other meat. Okay, now, with the water - I like this a little weird, I like to get my water ready to go in but put the greens in first and give 'em a good stir in with the onion and grease. Than pour the water in pretty quick. You don't want to destroy 'em or wilt 'em to smitherenes with the hot grease but just a dab makes the grease flavor 'em better.
Then put the water in. Salt and pepper. Bring 'em to a boil. Let 'em simmer a half hour or so.... maybe a little less and add a couple of splashes of vinegar the last 5 pr 10 minutes.
Be sure and taste 'em from about halfway through the cooking time because they're one of those things that needs salt and if you wait till too late it takes a ton. Only takes a little if you get it in soon enough.
Oh, and with salt pork you will not have to worry as much about getting enough salt so that's good.
