Out of curiosity, I looked up the Silpat in the King Arthur catalog: $34.95 for 16-1/2" x 24-1/2". Yikes.

Get William-Sonoma's less expensive version. I use it all the time. Just a quick wash afterwards, dry, fold and store it away.

I have one real Silpat and one that is from Bed Bath and Beyond that is the same type of thing, just a different brand. You don't have the buy the SILPAT brand. I don't think I paid more than $20 for either of them. Once you use one, you will never go back.
