I am of the understanding that all water within our atmosphere never really is used up; it just transfers from one form to another, but moisture content always remains the same. Not sure this is a certainty, but has been my understanding for a long time.

There could still be major issues. For example changing water availability for geographic regions or making an area susceptible to the development of sinkholes (in the case of tapping underground water).

I’m very familiar with invasive bamboo. It’s terrible on residential and agricultural property but I really don’t see what anyone thinks it’s going to do to an enormous data center.

This is all mostly fear mongering. When done properly, and in the right areas, Data Centers are a net benefit for the communities they are located in.
Rather than whining and spreading this fear, why not actually investigate the areas that are doing it correctly.
I challenge you all to look at Quincy, WA. I live there. We have had data centers for 20 years. We currently have 53. We are a small farming community of around 10,000. They are not noisy. They do not use up all the water. Our community has long been one of the largest farming communities in the country. We have among the cheapest electricity in the country. The data centers pay a premium and thus fund many community projects. My wife drives a school bus paid for by Microsoft. Microsoft just donated $200,000 to several community non profit groups. Our high school which was built just a couple years ago is the most technology advanced schools in the state. All this, for a community of around 10,000.
So, it can work, if done properly. But blanket fear mongering without actually seeing how they really impact people living near them is just lazy.
I won’t post any direct links so as not to seem to be only cherry picking positive perspectives. Just Goggle “Quincy, WA data centers” You will find plenty.
