My dad used to aoak hickory chips un water and then toss them on the barbecue coals so we could have hickory smoked steak.

Havent thought about that in decades. but AMZ has them for sale.

Yay Dad. A friend invited me over to see his new grill and have a steak. He prattled on about HIS patriarchies long history of grilling and served me meat that cried out for justice.

Because it was cooked on a propane gas grill instead of coal, wood or a combination of the two. I’m sure the ghosts of the ancestors he was lauding were hovering, shaking their heads going “tsk tsk” in disappointment.

Gas is cooking, briquettes are barbecuing.
