During the Second Punic War, Mago Barca (3rd Century BC) is said to have founded or taken shelter at a port on the island of Menorca (one of the Balearic Islands). This port was named Portus Magonis in his honor, which eventually evolved into the modern city of Mahón (or Maó in Catalan). The locals in Mahón had a traditional garlic-and-oil sauce. In 1756, the French Duke de Richelieu captured the city from the British. The Duke’s chef either discovered the local sauce or invented a version of it to celebrate the victory. It was originally called mahonnaise (meaning "in the style of Mahón"), which later morphed into the French word mayonnaise.
