Sandy Koufax didn’t pitch on the Sabbath.
Only on High Holy Days (e.g. Yom Kippur). He pitched on Friday nights and Saturdays for regular Sabbaths. Many Jews fall into the category of being partially observant (e.g. okay with non kosher hamburger, but not pork).
